Ingredients:

- 4 large bell peppers (any color), halved and seeds removed

- 1 tablespoon olive oil

- 1 small onion, finely chopped

- 2 cloves garlic, minced

- 1 pound (450g) lean ground beef or turkey

- 1 cup cooked rice

- 1 can (14.5 ounces) diced tomatoes, drained

- 1 teaspoon dried oregano

- 1 teaspoon dried basil

- Salt and black pepper, to taste

- 1 cup shredded mozzarella cheese

- Chopped fresh parsley, for garnish (optional)


Instructions:

1. Preheat your oven to 375°F (190°C). Place the halved bell peppers in a baking dish, cut side up.


2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened, about 2-3 minutes.


3. Add the ground beef or turkey to the skillet and cook until browned, breaking it up with a spoon as it cooks.


4. Stir in the cooked rice, diced tomatoes, dried oregano, dried basil, salt, and black pepper. Cook for another 2-3 minutes until heated through and well combined.


5. Spoon the beef or turkey mixture into the halved bell peppers, filling each one generously.


6. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the peppers are tender.


7. Remove the foil from the baking dish, sprinkle the shredded mozzarella cheese over the top of each stuffed pepper, and return to the oven. Bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.


8. Remove the stuffed bell peppers from the oven and let them cool for a few minutes before serving.


9. Garnish with chopped fresh parsley, if desired, and serve hot.
